I think with all the news about Google locking down the app store graphene OS feels like it's going to need some serious tutorial videos to help people stay ahead of the curve. Would really love to see this and probably might help me take the leap as well.

I’d vote for grapheneOS.

Signing via Core/HWI with a coldcard. A lot of wallets say if they vanish you can always recover via core - don’t think I’ve seen a tutorial on that.
