Wtf is Gianduia?
Gianduia (jahn-DOO-yah) is a traditional Italian confection from Turin, dating back to the early 19th century born when local chocolatiers began blending chocolate with the prized Piedmontese hazelnuts during a cocoa shortage. Nutella is actually its modern descendant (which became an awful product, as we know...).
What I made here is a handcrafted gianduia bar made with hazelnuts caramelized in maple sugar and panela (from @Bitcoin Beans), then blended into a mix of coarse and fine pieces, folded into tempered 70% Mexican stone ground dark chocolate.
The varied grind gives each bar a unique texture - part crunch, part melt - and the caramel adds a rich, natural sweetness that perfectly balances the dark chocolate. Hand-tempered, set, and cut individually, so no two bars are exactly alike!
These things are DA BOMB. Low key proud of these.
