As far as I can tell, it's happening when I'm on any network - several WiFi points and two different mobile networks. I'd prefer to use tor when and where possible, if I can, but this might put me off. I wonder, could it be because I'm already running the phone through a VPN?

Vpn will slow down tor a bit, wireguard performs slightly better. Some vpn allow exclusion of specific apps so you could exclude amethyst from vpn?

It sounds like you are using Tor+VPN which is probably causing the issue. I use Amethyst and the internal Tor functionality and have never seen this error.
