This made me curious, I've been tinkering with Arduinos recently and it turns out there's an ESP32 CAM module for anyone looking to make their own WiFi camera network. Could always vibe code the shiz out of them? Bookmarked to see if there's any ready to use devices too though.

Wired PoE cameras, ideally on a separate network without access to the internet. In that case, you can even use Chinese cameras like Hikvision, without that I would stick to something like Ubiquiti where I expect your data will not be actively sent out, but who knows.
