Yodl! I think of you and your wife when I make this now haha. Also, while it can be done in one pan, this was a three pan bourguinon, and I think it is far superior. I am still tweaking the recipe. It doean't feel as tedious as Julia Child's lol, but it is still some very-worth-it work.
These are Amsterdamse onions. Onions pickled with white wine vinegar, sugar, saffron, and a bay leaf. They are the crowning jewel of meat stew imo. They add a lovely sweet and sour component to round out the flavors.
