Half Life. Just replayed it (well ok Half Life 2 which came out in 04 I think) and it holds up extremely well. No other game has come close imo

Neigsendoig and I are past that (Sendo wasn't even born then), but games from this period that seem to stick pretty well are Doom (1 and 2 due to modding), Unreal Tournament, Duke 3D, and a bit of Quake (we were testing LibreQuake, a Quake 1 mod).
