Yes, i was also recently buying a model that at least has no mandatory eSIM on board, i was able to simply remove the sim-card that was sending all my data abroad. Tinkering with newer models (according to several forums) is really hard, it is basically not possible to strip away camera/sensors etc without ruining the car. Removing eSIM is also not possible, i think.

But it makes no sense, doing all the effort for your pc/smartphone whilst getting spied in your car 😅 Tough times.
