I have finally tried mung beans after a medical recommendation a year ago. First of all, they are not at any of the major grocery stores. Secondly, they sound exotic. Thirdly, if I buy some and donβt like them, then I have to eat all of it. The health food store had them in both their bulk and shelf foods. This store was the first to stock our honey 20 years ago, so street cred FTW.
Mung beans are delicious (if you like black eye peas), easy to prepare but require the 8 hour soak. Finally, they leave you feeling satiated but not bloated. The health benefits place them on my superfood list (for me, a picky eater). They are a keeper!
