Whipped up a quiche with sweet potato crust using the malabar spinach and local eggs from Naga Gardens Farm.

Malabar spinach is slightly slimy in comparison to spinach usually found in US supermarkets.

It's sweet, cooling, and an Aphrodisiac according to Ayurveda. Balances vata and pitta. High in vitamin A, iron and beta carotene.

Anyone ever try Malabar spinach?

Yeah I've grown malabar & Okinawan spinach. Both unappetising with that slimy texture. It looks like it works well in a quiche though.
