4.5 gallons of milk has made a pound of butter, a pound of mozzarella, a quart of buttermilk, 6 oz of ricotta, and I have 2 lbs of gouda & a half gallon of yogurt in process. I made a whey brine and I'll be freezing some for mildew treatment in next year's garden. I'll probably give some to the raccoons, too. 😅 2 gallons left from this round. I'll make manchego tomorrow and out that whey on the compost.

Any other cheesecakes? If so, what do you do with your whey?

Sell the whey to body builders, they don't realise it's a wasted byproduct and they're happy to pay a premium for it. Or feed it to animals.
