Spring time is good time to have the dongchimi.
If I remember correctly, it’s just water, salt, sugar, garlic, fruit, green onions, green pepper, and radish. I might be missing a couple things. One day I will post my mom’s kimchi recipes to @Zap Cooking
I plan to make a Korean cookbook with all my mom’s recipes. Mostly for my sake. 🤣

Are you guys using fermented shrimp and rice in your kimchi?

If you have daikons ready soon, we like to make ‘cold water kimchi soup’ a.k.a. Dongchimi in the winter season. It’s very refreshing and delicious. You literally just put it outside to ferment in the cold.

I’m Korean and this is the first time hearing someone put yogurt in process of kimchi making…

Watched my mother cook all my life. She never taught me, but my mother-in-law taught me how to cook and bake when I was living with my parents-in-law and husband.
Now I know the southern food secrets. :)
