Pro tip: Try adding 2 tablespoons of gelatine when the sauce is nearly done. Just hydrate it first by mixing it with a small amount of cold water. It changes the texture of the sauce & replicates the effect of adding some good bone broth. The pre hydrating just helps with it dissolving, it should...
