Going upside down in Ohio this week. When it warms up sap won't run much, the little that does will spoil. Looks like next weekend we'll get a freeze thaw cycle and another run. Spoiled sap makes terrible syrup, also if the trees bud the syrup is bad. 2 1/2 weeks to bud.

Last 100 buckets today. Should get another sap run this week. This ice will concentrate the sap a little but a big difference for me. Going from 2% to 3% sap means 35 gal sap/gal syrup instead of 45. Takes some work off of me.

Fired up and running hard today. Late start on boil. Me and teenage boys gathered about 1500 gal. of sap this morning with 4 wheeler, manpower an buckets.

I've seen sun dogs and halos, never inverted rainbow high in sky. Meteorologists? What is this phenomenon called. Front coming in taking us from 55 to 25 and will take about 8 hrs.

Slow boil tonight. I will run evaporator harder this weekend. I need to boil 45 gal of sap to get 1 gal of syrup. Goal on my homebuilt evaporator is to boil off about 1000 gallons of water this weekend to concentrate the sugar. Sats for syrup on its way. #homestead #foodstr #btc #homemade

It also makes an amazing coffee the month we get it. Gotta use a French press or pour over, sap could screw up innards of a machine. My favorite coffee all time is San Pacho Honey from @Satoshi Coffee Co.
