The problem I had was the coals kept dying… I kept having to babysit it.. did a “sloppy snake” configuration for the coals but the damn thing kept burning out. I got it done tho.
I cook on a big Weber kettle. I have found that starting with bottom vent completely open and use top vent to regulate heat is easier. Take your trays and put them on opposite ends with coal doors, place meat in the middle. If too much meat, one tray will work just need to load up coal.
Typically one cook only take me reloading the basket twice…maybe 3 depending on weather.

I’ve had expensive pellet smokers of all kinds…I love my Weber, lump coal, and it’s all very cheap.
