Seed oils are the main ingredient in everything.

Make 8 fresh flour tortillas fast with:

2 cups of all-purpose flour
1 teaspoon of salt
1 teaspoon of baking powder
3 tablespoons of extra virgin olive oil
1 cup of warm water

No baking powder? Use 1/4 cup of plain yogurt.

Instructions:

1. In a large mixing bowl, combine the flour, salt, and baking powder. Stir until well-mixed. Add the oil and stir until the mixture resembles coarse crumbs. Gradually add the warm water, stirring until the dough comes together and forms a ball.

2. Knead the dough on a lightly floured surface for about 5 minutes, or until it becomes smooth and elastic.

3. Divide the dough into 8 equal-sized balls and flatten them slightly.

4. Use a floured rolling pin to roll out each dough ball into a thin circle, about 6-8 inches in diameter (I use a wine bottle).

5. Carefully transfer the tortilla to a large hot skillet on medium-high and cook for about 30 seconds, or until bubbles start to form on the surface.

7. Flip the tortilla and cook for an additional 30 seconds, or until it is lightly golden brown on both sides.

8. Repeat with the remaining dough balls, stacking the cooked tortillas on a plate and covering them with a clean kitchen towel to keep them warm.

Serve the tortillas warm with your favorite toppings.
