just roasted some red potatoes and red onions tossed with lots of oil some salt, pepper, and oregano i remain completely convinced that this is the best way to prepare vegetables. dead simple, always...

the ratio i used was 5 red potatoes, 1 onion, 1/4 cup canola oil

i would reduce the oil maybe to 1/8th as 1/4 was fine but a little heavier than i wanted. this made i'd say maybe 4-6 servings?

you could do some programming yourself, feel the hard stuff or tedious stuff, start making your own abstractions because of your own internal desire for making it better and then be motivated to seek...
