Which software are people using to back up their Mac to some cloud storage?

Hard requirements:

• macOS
• locally encrypted
• automated, running in the background
• has a GUI to view status, browse snapshots, and restore stuff
• data stored in Europe

Nice to have:

• "bring your own cloud storage" model, or at least some kind of open protocol like SFTP, WebDAV, or S3
• open source software
• also works with Linux
• free or one-time purchase instead of a subscription
