After a quick search, I found you can get trial esim cards from the three big tech cheese heads. You may be forced to download their apps and I'm not sure how much exposure you are willing to... well, be exposed to.

You be limited to using their webapp but most of the time they work on a mobile browser just fine. These generic sites usually are cross-platform hybrid frameworks like Flutter and Mendix.

When logging to their online app, you'll be prompted for a phone number, but there's also an login option with that registered temp email, usually under the "I don't have access to this phone number any more" link. So now you can login by activating a top via the temp email and that trial sim card mobile number is no longer relevant.

My guess is that you're in the states. I had a similar situation with other second hand online stores. I did find a cheat workaround if you need their service after all.
Purchase a "try me" sim card from a pre-paid mobile provider, loads of them out there, and it usually come with a short trial mobile number that you can use to register. But also register an temp email which you can always re-deploy at any time.
