As a first timer I would always opt for Ubuntu. Biggest community, biggest app support via various package repositories and easy to understand. Gui is clean simple and complete. PopOS if you are a developer and or if you have an Nvidia card. Still based on Ubuntu but suits this cases much better.

Then I would explore taste from there using a VM.

It's too late, if it's possible someone is doing it regardless. It's better it's done in public than in some lab somewhere. Ai does what you teach it and what you ask it to do.
