How does it work from a backend perspective? Is everything somehow hosted on relays, or is Nostr (correctly I might add) used for identity, communication, and payments?
Everything is hosted on relays. Escrow payments are swapped from lightning into an escrow contract onchain, and swapped back out into the lightning wallets on payout. The escrow can only forward / reverse the payment.

Plenty of space for other providers, but building a 2 sided marketplace like this is notoriously hard..
As far as I know, airbtc hardly uses nostr. On Hostr, it’s non-custodial all the way and listings / reservations are broadcast over the network (encrypted).
