What exactly does “its own chip” mean? Using TROPIC01 in the Model T design or making your own controller? Or?
It's custom packaging of STM silicone. It's also the preparation phase of adding TROPIC01 into the package next to STM.

Do you mostly use native segwit addresses or taproot ones? And why? Which one do you choose or use?

I'm not an expert on Taproot, but as stated in 3), I don't think quantum computers are a risk as of now.
