Here’s the recipe I followed. ☺️

🍮 Classic Filipino Leche Flan Recipe
Ingredients
For the caramel:
* 1 cup white sugar
For the custard:
* 4 whole eggs, 2 egg yolks
* 1 can (14 oz / 300 ml) condensed milk
* 1 can (12 oz / 354 ml) evaporated milk
* 1 tsp vanilla extract
* Zest of 1 calamansi or lemon (optional but traditional)

👩‍🍳 Instructions
1. Make the caramel
* In a pan over medium heat, melt sugar until golden amber
* Swirl gently (don’t stir)
* Immediately pour into llanera or flan mold
* Tilt to coat bottom evenly
* Set aside to harden

2. Make the custard
* In a bowl, gently whisk egg yolks (don’t beat too hard—avoid bubbles)
* Add condensed milk, evaporated milk, vanilla, and zest
* Mix slowly until smooth
💡 Tip: Strain the mixture for extra-smooth flan

3. Pour & cover
* Pour custard over hardened caramel
* Cover molds with foil

4. Steam
* Steam over medium heat for 30–40 minutes
* Check doneness with a toothpick (should come out mostly clean)
OR Bake:
* Place molds in a water bath
* Bake at 350°F (175°C) for 45–50 minutes

5. Cool & chill
* Let cool completely
* Refrigerate at least 4 hours (overnight is best)

6. Serve
* Run a knife around edges
* Invert onto a plate and let caramel flow 🤍🍮
