Since the counters next to the stove are limited in dimension, I have to group some small appliances by the 3 outlets, which reduces the space I need to cook things with a lot of ingredients or accessories. Photos show my solution is to get a 30” long heavy cutting board that neatly lays atop the stove burners. It supports the large electric skillet. I drag that skillet out if I will cook for 3 and also want to cook more for fridge or freezer.

Abundance of eggs and lots of partial full bags of bread on hand, and away I go. 7 eggs make a dozen toasts. Add milk, vanilla, a dash of salt. Make the bowl to dip the bread in be a pie pan to fit 2 pieces of bread at a time. This is very basic and cheap food.

Surviving fine in Phoenix since the weather isn’t daily up over 105°. Yet. So we made our monthly trek to Surprise, 15 miles to the nicest and largest Trader Joe so we can get fun extras to lots of salads we are eating now. And I went crazy getting fun snack food today. Me and the guys are quite pleased. Lot at part of our haul! Wish I could sleep soundly at night. Like my dog could do many times of the day. And he loved “his” pillow when he was still able to get on the couch to nap. Missing our guy who we hope is resting well in peace. It’s been 5 months now and daily I catch myself looking for him as I pass by “his” places. #DogsOfMastodon

Well then. Whoa, we just had marvelous beef petite sirloin fillets bacon-wrapped that I learned how to cook just today. We had a noon lunch because son John is on the way to get 3 temporary crowns and we thought maybe he might not be able to chow down on return. Drew was thrilled to death too. Give this guy a tender steak and you will see him chow down like there’s no tomorrow.

Since Drew lost 15 pounds in 3 weeks at the hospital we are invested in feeding him the best food we can get he will happily eat. I was able to get 4 chunks of bacon wrapped fillets on sale so our cost was $14 instead of $24 it was worth a try.

I am feeling pretty cocky because I have yet again shown my critical youngest son why it was worth it to get a nice quality 12” cast iron skillet even though I may only use it 6-7 times a year. And he was so happy how I made the fillets he was shocked and had no criticisms or suggestions to do next time. Rare time, this.

Drew is feeling mighty pleased with himself because he thinks he talked us into letting him take a nap. Reality: we want him to take this nap since his brother will be gone 4-5 hours and thus unavailable to help me with transfers. Drew is so very weak yet, it’s a 2 person transfer unless you are as big and capable as his little brother. This list is more than 3 Good Things or I would have tagged it so.
