Think either rosemary garlic, or your other option is a mint sauce, also great with lamb. Another fave is Moroccan spice mix (raz el anout), a heap of veggies and couscous. Delicious

Stab it all over like a crazed maniac, about 2cm apart, 1cm deep. In each hole put a sliver of garlic and a spring of fresh rosemary. Coat it generously with olive oil, bit of salt and pepper, in the oven. I always want to try other recipes but can’t get there. Yes, on the spit is also amazing, then you get to thrash it every 20 mins with a rosemary branch from a barrel of water and oil. Fun for everyone. Stabbing or thrashing, take your pick
