The soil should be covered, either by plants or mulch to protect the life in the soil.
Grass is one of the best converters of sunshine into hydrocarbons. When you cut the grass, the plant prunes its roots releasing energy into the soil, giving soil life a boost.
As long as you don't let the grass go to seed or get too close to the vines, it's a net positive. Even better if you can mulch the cut grass onto your rows.
