But say if I managed to install grapheneOS, do banking apps (and all the other stupid apps I need for life and work) work on it as normal?

GrapheneOS includes "Sandboxed Google Play" — a feature that lets you run Google Play Services as a normal, unprivileged app instead of deep in the OS. This tricks 99% of banking and work apps into thinking you are on a normal Android phone.
