i've watched them being prepped. after pushing russets through the slicer, they soak them in water, drain, and deep fry for a few minutes and drain. when u order them, they finish deep frying them. easy to reproduce.
their kitchen is full of buckets and sinkfuls of soaking sliced potatoes in the morning.
