Obsidian really is the best option. You can sync with a private git repo but IMO paying for sync is money well spent, the product works perfectly.

I have a few, those being Standard Notes, Logseq and Notesnook.

Started on Standard Notes, but wanted more “functionality”. I tried to run logseq for a while. The mobile app was too restrictive. Tried obsidian and it didn’t work well for me. Eventually landed back on Standard Notes

Joplin, plus self-hosted web server. Is open-source, even the server code (you can also use dropbox etc.). Covers all your needs, plus it even supports e2ee.
