Using Linux does not protect you from exploits and exfiltrations. This is coming from someone who has daily-driven linux for over a decade.
Hardware wallets solve a completely different problem than what you're referring to. A hot wallet on a linux machine is still, for example, swapping your seed phrase from RAM to disk, sitting in cleartext on an unencrypted volume.
