@nprofile1q... GrapheneOS has the same camera functionality and quality as the stock Pixel OS within the same apps. You can use Pixel Camera if you want everything it provides on GrapheneOS.
GrapheneOS Camera has the same continuous autofocus and zoom-based multi-camera but it uses the less aggressive implementation of HDR+ available outside Pixel Camera for merging frames together. It doesn't reduce noise (different thing than blur) as much in low light, but it has a similar Night mode already.
