They have required a phone number for a long time. Especially if using a VPN/tor/whatever IP masking

Yeah they've done this since a couple of years back at least. I tried to join a discord of a FOSS projects back then. They immediately banned my account until I could add a phone number. 🤡

I refused to sign up with my email, definitely not giving them my phone number.

Discord employees review and disclose “private” chats for entertainment. They disclose chats along with user and device metadata for ideological purposes. It’s for the best that they set expectations by requiring phone numbers.
