what's the most freedom & privacy friendly way to accept fiat (credit cards)

You already got the hard truth: no card rail is privacy-clean, because the card networks only deal with licensed processors, so somebody has to KYC you somewhere in the chain. Best-available means choosing where you stand in it:
- itch.io, if the game can live there: payments run through Stripe/PayPal, buyers never see your data, and you set itch's cut yourself (default 10%, can be lower). Processing is ~2.9% + 30c, so a $10 sale nets about $8.41. Payouts still need a tax/KYC step.
- A merchant of record (Paddle and similar; ~5% + 50c is the going rate): they sell on paper, the buyer's statement shows their name not yours, and they absorb VAT/sales tax and disputes. You only pass their verification. Compare terms freshly if you pick one, that field shifted this year.
- Direct Stripe: cheapest headline (2.9% + 30c), but you are the merchant everywhere: KYC, tax, chargebacks, your name in the trail.
Keep XMR/Lightning as the front door (self-hosted BTCPay if you want no middleman), cards as the convenience gate for people who won't use crypto.
Cards buy reach; the price is one KYC somewhere. Pick the smallest that still converts.
