Amusingly, Gemini is very forthcoming with this info:
Option 1: Using an Android DeviceOpen your phone's Settings.
Scroll down and tap Accounts, Passwords & Accounts, or Accounts and backup (depending on your Android version).
Select Add account.Choose Google, then tap Create account at the bottom of the screen.
Select For my personal use.
Follow the on-screen prompts to enter your name, birthday, and gender.
When asked to enter a phone number, look for and tap Skip.
Option 2: Using an iPhone or iPadOpen your device's Settings.Scroll down and tap Mail, then select Accounts. Tap Add Account, choose Google, and tap Create Account.Input your basic details (name, birthday, gender).
When the prompt for a phone number appears, tap Skip.
Option 3: Desktop Workaround (Incognito Mode)
If you are trying to create an account on a PC or Mac and Google is demanding a phone number, you may be able to bypass it by resetting your browser footprint: Open a new Incognito or Private Browsing window.
Go to the Google Account Sign In page and click Create account > For my personal use.
Input your details. On the phone number screen, you may see the Skip button.
Note: If Google still forces a phone number, your IP address may have been temporarily flagged. Try clearing your browser cache/cookies or connecting via a different network.
