Went on an ice wine tour yesterday... Think I developed diabetes. Seriously. The amount of sugars in 1oz of ice wine... And I had 6 different (4 Vidal, 1 Cab Franc, and 1 1 Gurztenminer)... Paired with things like cheesecake and marshmallow. Savoury works better like the smoked cheddar and salami or French Onion Soup. I like ice wine but had never considered it as more than a dessert wine without pairing. Yes, our cultures can be aligned.
