๐Ÿ’ก the ultimate test of "nonstick" performance is actually attempting to make light, fluffy scrambled eggs, as opposed to fried eggs, since scrambled eggs require constantly exposing uncooked egg to the pan surface and keeping it moving quick enough that the curds remain desirably cloudy.

๐Ÿ’ฏ This the definitive test. We bought a Misen and it's been an absolute disaster. Cooked non stick for maybe 3-4 cooks and that was all she wrote.

Are you concerned with the supposition that titanium dioxide is bad for gut lining integrity? (I haven't researched this too deeply.) I'm sticking with steel, cast iron, and enemaled steel.
