I do know there is a mariachi Metallica cover band.

There is but I can't think of any bands off the top of my head. If this were Facebook I'd have numerous folks to tag and ask. Alas, this is nostr and my face to face friends don't use it.

Create it!

There's gotta be something more focused, but they escape me. So you'll have to settle for Jason Richardson's Hos Down with its medley of breakdowns, of which one is country https://www.youtube.com/watch?v=2Z2XS8n8YtQ

Bilmuri? This is the only album I've listened to but I do enjoy it. Main guy behind it was also in Attack Attack who are the OGs of crabcore. https://podtards.com/3a1bd337b7edf8ff1e89ebec3c7f000d000dd7f751641dc9682aa9f2a87e6004.gif https://music.youtube.com/watch?v=agcqtbzvwDI
