Could it be done? Yes! I would begin by adapting my gempub-generating script to export TXT files. I would have to export chapters in segments if they got longer than 4000 characters, this was a limit of the iPod's notes feature.
I don't think I'll pursue it further, though. Scrolling text on my old clickwheel iPod has a very rough afterimage effect. I wouldn't want to read anything book-length on it.
