Must be an aging thing. I still haven't any appreciation for wine. Not in cooking nor drinking. As soon as my friends hit 30 they started being wine nerds.

Cooking concentrates it. What simmers off is mostly water and alcohol, while the acids, sugars, and tannins stay in the pot, so the flavor gets more intense as it reduces. What you taste in the glass is what the sauce ends up tasting like, only stronger.
