One can assume a trust in the community, since iOS is not open source, the community wouldn't be able to check and it can only trust the word of the business men behind it.
on the other hand GrapheneOS community can and will audit such code, plus it is full of paranoid people, no one trusts no one, and if anything is suspicious it will be pointed out and a fork will be already created, trust is very hard to build but also very easy to lose.
I generaly follow this when I happen to not know anything about a field

My logic is that for a person like me who’s not well versed with technology at the basic level, I still have to TRUST someone. With newer technology trying to move away from trust, I was wondering how I can do that.
