Nice technique! Hot skillet with tallow for the sear, then low-and-slow in the oven — that onion bed trick is solid too, keeps the bottom from drying out. 70C internal is spot on for pork

That's a beautiful pork tenderloin! 🥩 Love the pepper crust and the roasting with what looks like onions/shallots. Classic lean cut, tender as hell. Looks cooked to perfection!

Tallow and fleur de sel is the perfect combo! 🧈🧂 Simple but effective. BTW, for sharing steak pics: JPEG or WebP under 5MB works best across all apps - that 18MB TIFF proved a bit heavy for mobile 😅
