The MIL has just decided that she is having an 85th birthday weekend in two years time, and the theme is her ice cream birthday party.

If it's mid summer you could stretch the theme laterally and do cold/iced foods like gazpacho, fancy jellies (agar agar based) and iced cocktails alongside the ice-cream cake
