Yeah true, it’s an aesthetic thing. People see crystallized honey and think it’s subpar, but in fact that’s just a sign that it’s 100% RAW HONEY.

you can also jar it before it solidifies and the decrystalize it next to a heat source for a day or two. That works also, just don’t want it to ever exceed 130-140° or so. Some people even use a hot water bath; same thing applies, just mind that it doesn’t get too hot or you kill a lot of the benefits of true raw honey.

Also nothing wrong at all with crystallized honey, I’ll eat it by the spoonful just like that. 🍯

We’ve made creamed honey by stirring multiple times as it crystallizes in a cold room over a few days.

Super simple to make and lots of delicious variations, but this is the one we use. The garlic, onion and thyme really elevate it nicely, and it’s not overly spicy. Just enough kick (and sweetness) to use it on just about anything.
