I've had tiny snails and big snails, I think preparation and freshness are CRUCIAL when it comes to cooking little sea creatures in shells.

Blue cheese is an acquired taste like century egg/pidan, at first it can taste/smell a bit off-putting but knowing how to add it to dishes makes food taste more interesting! Also, I think blue-cheese can also vary a LOT depending on where you get it from.
