I have always got bamboo, but I have not figured out a way to keep them from warping over a few years time. I try to keep them washed and dried off as best I can, but they always warp and even pull apart in layers over time. I even bought some special oil for them and conditioned them, but it doesn't seem to matter with time. It just seems like you have to eventually throw them away and buy new.
