Interesting… here our farmers make a cacao wine, basically the juice off the seed during fermentation is collected over those 7 days and left to ferment to alcohol. Would this be the same thing? Or have they added cacao to the wine? That sounds a bit weird but interested to know more about the Chocolate Wine!!

I would love to taste the fermented cacao seeds result! In this case (my test) was just some good red wine, mixed with melted chocolate + cinnamon and let to settle for few days. >7 days left to ferment LOL you guys are so lucky in the tropics, you can literally make alcohol whenever you want from whatever you want. Where I live is quite hard to make alcohol, fermentation takes more than 2 months.
