I get into this discussion every time, but the CP won't listen. When you put salmon in the oven, it will cook in 1/2 to 1/3 the time if it's on a metal sheet as opposed to pyrex or ceramic. A pizza stone slows it down even more, unless you let it soak for 15 minutes after it's preheated. The ceramic and glass dishes heat way slower than the fish.
