I bought some liver from a local farm a few years ago and wasn't excited about the flavor or texture....I tried a couple different recipes and recall that pre-soaking in milk was helpful...

But I always had to smother in caramelized onions bc I didn't like the underlying taste

I did the milk presoak and used a ton of onion. My experience was pretty much the same as yours. I'm going to freeze most of this stuff and try to eat it in batches. Maybe grind it and use it in sauces. Lots to experiment with.
