Ghee: 480°F (249°C); Clarified butter, high in saturated fat.
Tallow: 400–480°F (204–249°C); Rendered beef fat, crispiest frying results.
Refined Coconut Oil: 400°F (204°C); Saturated/MCTs, requires sealed-element fryer.
Medium-Heat Options (Sautéing & Baking)
Lard: 374°F (190°C); Neutral flavor, affordable, good for frying.
Duck/Goose Fat: 375°F (190°C); Rich savory flavor, solidifies at room temperature.
Refined Olive Oil: 390–470°F (199–243°C); More stable than EVOO for cooking.
