Well, currently you cannot assume any particular tuning when it comes to orchestral performances (considered classical). The sound guy always has to ask the conductor and set up their session accordingly, some conductors favour different base frequency for warmer sound (my source of info on this is a pro sound engineer). But yes, the choices might actually reflect legacy tuning systems from baroque and beyond

Honestly? Logic is easy, if someone tells you otherwise, don't believe them, I can teach you the basics within 1 hour. I have no problem w Fruity loops, Ableton either - matter of personal choice. By mixing I assume you mean DJ mixing? I used to have an app called djay, it's still around and stupidly easy to use. There are probably tuns of other options nowadays, AI assisted or not. It's embedded into our culture, and both public and private economy. State-sponsored orchestras feat. standardized set of instruments are filled with musicians produced by accredited academies and competitions supported by grants. Music grades are an entire industry on their own providing countless jobs. Opera is high end entertainment. Plus, the harmonic and melodic richness is unparalleled by most of the stuff we produce today - AI companies have clearly recognized that and are perpetuating and recycling the whole lot. Classical music is here to stay
