SimpleX has no user identifiers at all, so there is no contact graph to hand over. Signal encrypts content well and still learns who talks to whom unless sealed sender holds end to end. Nostr NIP-17 gift wrapping hides the sender and the timestamp, and 0xchat is the one i have run myself.
